I’ve been on a major Southern
Plate kick lately, and this is just another example! But I make no apologies – everything I’ve
tried from Christy Jordan’s repertoire has been a hit.
Tonight, I gave her cowboy pizza
a spin, and it turned out quite well (if I do say so!). I couldn’t find any vegetarian chik’n at our
nearest grocery store this weekend – clearly I’m no longer the sole purchaser! –
so I substituted good old tofu in its place, which was a welcome treat. For all the flak we vegetarians get about
being tofu-lovers (and, as far as I’m concerned, so be it; I love the stuff),
LeeLee and I don’t actually eat it all that much. But when I do, I’m reminded how versatile it
is! Tonight was just another such
example.
Since I’m on a bit of a staycation this week, I had time to
whip up my own pizza dough this afternoon and let it rest in the fridge for a
couple of hours before dinnertime. When
it was time to eat, I prebaked the crust for 12 minutes and then topped it with
barbecue sauce, an Italian cheese blend, the tofu, and green onions. After 20 more minutes in the oven, it was
ready to eat!
The crust was a little moister than I usually like because I
went rather heavy-handed with the barbecue sauce, but I’ll take that tradeoff
any day if it yields a nice rich flavor!
Paired with a salad, this was a perfect summertime meal. And I’ll definitely make it again.
