Tonight is usually out cookout night, but Mother Nature had
other plans – it’s been raining for a week!
So tonight, instead of kielbasa and all the fixins, we went to Plan B
and whipped up some spaghetti and vegetarian meatballs indoors.
I put a pot of water on to boil and, once it got rolling,
added the spaghetti. While that cooked,
I formed some meatballs from a tube of Lightlife vegetarian beef and put them
in a heated pan with a tablespoon or so of olive oil, turning each of the
meatballs every couple of minutes.
For the sauce, I pulled out a jar of the chunky basil pasta
sauce I made this summer! Tonight’s
dinner was the maiden voyage for this year’s batch, and as usual, this recipe
didn’t disappoint. There’s just nothing
like having fresh tomatoes in the “offseason”!
Thank goodness I’ve got more jars where this comes from.
The pasta and the meatballs finished cooking at about the
same time, and all I had to do after that was drain the pasta and put
everything together! A base of spaghetti
topped with several spoonfuls of sauce and half a dozen meatballs – we could
have been at an Italian café. Add a
couple of slices of garlic bread on the side and the meal was more than
complete.
As for the cookout?
Who knows – maybe we can squeeze one in this week sometime. I’ll definitely keep you posted!
